Sweet and Sour Pork

Ingredients
- 200g Pork
- 1 Egg
- Dash Water
- 1/2 tsp Salt
- 1 tsp Sugar
- 10g Soy Sauce
- 10g Starch
- 30g Tomato Puree
- 10g Vinegar
- Dash Coriander
Instructions
- Slice the pork into strips. Separate the egg, keeping the white for the marinade.
- Mix a pinch of the salt, 1 teaspoon of the starch, the soy sauce, and the egg white, then turn the pork strips through it and marinate for about 20 minutes.
- In a small bowl, stir the remaining starch with a little water and the vinegar to make a thin slurry.
- Heat oil in a wok to about 190°C (375°F). Fry the marinated pork until browned, then lift out and drain on a plate.
- Leave a little oil in the wok, add the tomato purée and sugar, and heat until combined. Add a splash of water, bring the sweet-and-sour sauce up to heat, then return the pork.
- Pour in the starch slurry and stir-fry until everything is glossy and well coated. Serve garnished with coriander.
