Potato Leek Soup

Ingredients
- 2 tbsp butter
- 3 leeks
- 4 potatoes
- 4 cups vegetable broth
- 1/2 cup cream
- 1 tsp salt
Instructions
- Trim and slice the white and pale-green parts of the leeks. Rinse well to remove grit.
- Melt the butter in a pot and cook the leeks gently until soft, about 8 minutes.
- Peel and dice the potatoes, add them with the broth and salt, and bring to a boil.
- Simmer until the potatoes are tender, about 20 minutes.
- Blend smooth, stir in the cream, warm through, and serve.
